​I'm a perfectionist. I can balance twenty bottles on my nose whilst I pour your gin and tonic. But great bartending isn't only about showstopping entertainment. Great bartending is understanding the subtleties of  flavours and blending them together to create a perfect drink. Great bartending is about skill, artistry, performance, dedication, personality and professionalism. Below is a snapshot of my work experience. ​My role is central to this busy downtown cocktail bar. With an international clientele to entertain, the drinks must be perfect. Whether I am honouring the classics,  creating bespoke drinks to match the dining experience or adding to my growing list of personal inventions I ensure that your experience is personalised and unforgettable.

When the tourists go home the Greeks come out to play and this is a crowd that really know their Manhattans from their Martinis. I've built an excellent reputation in Greece and have shown off my skills in some world class venues. The Greeks really know how to party and it's my job to make sure the party never stops. It doesn't.

Starbeach is one of Europes premiere party venues. I worked there for seven years in the role of Manager and Head Bartender. Whether it's midday or midnight the crowd is never less than a couple of thousand strong. Delivering first class drinks, without compromise, in a fast paced high energy environment. I taught my colleagues to play football with the bottles to give flaring an extra kick (get it? Kick.). I managed a huge team of staff whilst serving drinks standing on my head, literally!
Santorini is a dream destination. Impeccable service and innovation are key to working in such a world class environment that doubles as a millionaires playground. Cocktails and dreams like you've never seen!

A fabulous training ground for organisation and precision. A Greek wedding usually has around two thousand guests so building a champagne fountain can be an afternoon's work. Liaising with colleagues to ensure synchronicity and perfection. Every drink mixed must be a performance which is perfectly executed and impeccably presented. Organisation, time management and precision must go hand in hand with artistry, skill, and showmanship.

My first ever job was at a small taverna as the assistant to the Head Waiter. A wide eyed teenager, trying to take everything in and impress the boss. Later, I served eighteen months in the Special Forces and left the experience ambitious, eager to learn, and disciplined. Every seasoned bartender has worked at On The Rocks. Maybe not the same one, but somewhere in the world. This was my first bartending gig and I spent every minute of my time practicing and perfecting my skills. I wouldn't stop until I was the best. I still won't.
